Once washed and the leaves carefully removed, the olives undergo the fringing process carri out by a hammer mill.
The following operatin is accomplished by a special technique of natural cold dripping.
This process allows the extracted oil to preserve its vitamin substances and a colour very close to green.
The oil extraction through natural cold dripping and the particular olive mixture (Frantoio, Moraiolo and Leccino) allow to keep acidity valves low.
In terms of oleic acid weight 0.35 grams in 100 grams of oil.
